The "ajoblanco" (ajoblanco, sometimes also written as white garlic) is a very popular cold soup from the gastronomy of Andalusia and Extremadura. It consists of bread, ground almonds (in times of scarcity, as in the post-war period, dry bean flour has been used in certain areas), garlic, water, olive oil, salt and sometimes vinegar. It is usually eaten accompanied by grapes or melon pieces.
INGREDIENTS: (4 people)
3 or 4 cloves of Garlic
100 grs. wet breadcrumb
Half a glass of Extra Virgin Olive Oil
2 tablespoons high bean flour
Salt, Vinegar and 1 Liter of Water.
PREPARATION
Put in a high container, the peeled garlic cloves, the wet breadcrumbs, the oil and with the mixer, mix all the ingredients until you get a dough similar to mayonnaise. Then add the liter of water, vinegar and salt to taste and continue beating until the dough is dissolved in the water.
Garnish: Chopped apple, melon, grapes and raisins.
Serve very cold
